Producing mushrooms is not like raising your usual garden vegetables. But then, mushrooms aren't vegetables, they are fungi. Mushroom fungi do not contain chlorophyll, so while that means they don't need sunlight, it also means that they depend on an especially nutritious growing medium. Because mushrooms are different than vegetables, they are grown inside dark, climate controlled buildings and can be produced year round for high quality mushrooms 365 days a year.

Step 1: Prepare the Growing Medium
The first step in producing superior mushrooms such as those grown by Modern Mushroom Farms is to create an ideal growing medium. The medium (equivalent to soil for other plants) is a pasteurized compost made from sources such as corn cobs, straw, hay, water and nitrogen supplements.

Step 2: Spawning
No fish need to swim upstream to complete this task, but for the mushrooms to grow in the medium, mushroom spores are added to the compost. These mushroom spores create mycelium, the mushroom's equivalent of roots.

Step 3: Growing
Now that the medium is ready and the trays are filled with spawn, the growth medium is covered with a thin layer of peat moss. During this time, special care is taken to maintain the temperature, humidity and moisture until the pins (new mushrooms) come up through the peat moss. It takes a mushroom about 17-30 days to grow to maturity depending on the variety. The whole process from growth medium to harvest takes approximately 9-12 weeks.

Step 4: Harvesting & Packaging
When the mushrooms are ready, they are harvested by hand into trays, vacuum cooled and prepared for transport to a store near you.
