Mixed Mushrooms with Port
INGREDIENTS
- 1-1/2 tablespoons olive oil
- 1/2 cup chopped onion
- 8 ounces Modern crimini mushrooms, cleaned, trimmed and quartered (about 2-1/2 cups)
- 4 ounces Modern shiitake mushrooms, cleaned, stems removed, caps thickly sliced (about 1-1/2 cups)
- 2 teaspoons finely chopped garlic
- 2 tablespoons good-quality port wine
- 1 teaspoon chopped fresh or 1/4 teaspoon dried thyme leaves
- 1/2 teaspoon salt
- 1/8 teaspoon ground black pepper
- 4 ounces Modern oyster mushrooms, cleaned and stems removed
INSTRUCTIONS
An impressive companion for roasted meats, poultry or game, this deceptively easy dish makes any meal an occasion.
In large skillet, heat oil over medium heat. Add onion; cook and stir until soft, about 3 minutes. Add crimini and shiitake mushrooms and the garlic; cook and stir until lightly browned, about 5 to 7 minutes. Add 1/2 cup water, 1 tablespoon port, thyme, salt and pepper; cook until liquid evaporates, 3 minutes. Add oyster mushrooms; cook 2 minutes longer.
Yield: 4 servings (about 2 cups) |
