Portabella Pasta
INGREDIENTS
- 2 tablespoons olive oil
- 6 to 8 ounces Modern portabella mushrooms, cleaned, trimmed and coarsely chopped (2 to 2 1/2 cups)
- 1 teaspoon finely chopped garlic
- 2 cups prepared spaghetti sauce or Alfredo sauce
- 8 ounces pasta (e.g. spaghetti, rotelli, penne, ziti), cooked according to package directions and drained
INSTRUCTIONS
There are lots of ways for you to get creative with this basic recipe. You can add chopped onion and sweet red bell pepper or chili powder and ground cumin when cooking the mushrooms, or add about 1/2 cup prepared salsa, frozen peas or chopped fresh tomatoes with the sauce, or top with chopped fresh basil, grated Parmesan cheese or bacon-flavored soy bits before serving.
In large skillet, heat oil. Add portabellas and garlic; cook and stir until mushrooms are tender, about 7 minutes. Stir in prepared sauce and cook 3 minutes longer. Add pasta; toss until well combined.
